    I have to be honest with you---I’m not the biggest cookie fan in the world and I’m pretty picky when it comes to them. A cookie has really got to be something special to spark my interest, to pass my test, to earn my trust.

    In many ways, it’s just like dating! Or not, I don’t know...

    They just never really enticed me the way cake or ice cream do. When I was a little girl, if given the choice between a cookie or some fruit, it’d for sure be the fruit!

    Every time. Even now---the fruit.

    Um, this is probably where many of you will probably click the ‘X’ up there to close down this tab, isn’t it? But you know, that’s too bad because I was just about to give you the low down on the best chocolate chip and walnut oatmeal cookie ...ever.

    At least I think it is; and that’s definitely saying a lot because, well, I already told you, I’m picky with the cookie like that. So rest assured, this cookie will do right by you like a good guy cookie should.

     Chocolate Chip and Walnut Oatmeal Cookies

    Listen my friends---I messed with this recipe until it was perfectly chocolatey, beautifully sweet with a touch of the salty (because yes, baked goods need salt too), and chewy the way it should be. It’s the most perfect chocolate chip and walnut oatmeal cookie.

    It just is.

    This is a one-bowl cookie recipe right here. It’s extremely quick and super easy to make. Can it get any better? Well yeah, like I said, they taste amazing!

    So I prefer milk chocolate chips to dark chocolate chips when it comes to cookies and I feel like this kind of cookie really needs the milk chocolate chip. To me, it’s just a better match with the textures and flavors of this cookie.

    But of course, if you prefer semi-sweet/dark chocolate chips, then by all means, you work that dark chocolate cookie thing. I’ll just hang out in my tiny corner over here, with my lovely little milk chocolate morsels, all happy and stuff.

    Well last night, a bowl of gorgeously ripe and delicious grapes that I picked up from the farmer’s market sat before me on the counter as I baked these luscious cookies. And so, I had that lifelong decision to make again… the cookie or the grape?

    Last night’s answer: I ate all the cookies---OK, only after eating all the grapes first. Well what else was I supposed to do while standing in the kitchen, waiting and staring at the cookies in the oven to finish baking?

    Well, I really do hope you love this cookie as much as I do and please, do not forget--- look to the cookie!

    Chocolate Chip and Walnut Oatmeal Cookies

    Ingredients

    • 1 cup butter 2 sticks, melted
    • 1 ¼ cups tightly packed brown sugar or rapadura
    • ½ cup white sugar or rapadura
    • 2 teaspoon pure vanilla extract
    • 2 eggs
    • 1 ½ cups flour
    • ½ teaspoon baking soda
    • 1 teaspoon sea salt
    • 3 cups quick-cooking oats
    • 1 cup chopped walnuts
    • 2 cups milk chocolate chips

    Instructions

    Preheat oven to 325º F (165º C). In a large bowl beat together butter, brown sugar, and white sugar. Add eggs and vanilla, and beat well. With a large spoon/spatula, mix in flour, baking soda, and salt until just barely mixed. Mix in oats, walnuts, and chocolate chips. Take heaping spoonfuls (about the size of golfballs) and place on an ungreased baking sheet. Bake for 15 min and you don't really want to wait for the cookies to brown. They will be perfectly chewy. Enjoy!

              Hi Bituin! Well, I haven't tried it myself. You might be able to use rolled oats instead, but because of the low moisture content of the cookie dough recipe, you may find that the rolled oats are more dense than the quick cooking oats in the cookie. By the time the cookie bakes, the quick cooking oats are cooked, but the rolled oats may take a bit longer to fully cook through. The difference between them is just that quick cooking oats have been pressed so that they absorb water much faster, and therefore, cook faster! I wonder... maybe if you just barely pulse them in a food processor before adding them into the cookie dough mixture, the rolled oats might work pretty well. Best of luck to you!! 🙂

                I ued rolled oats and they turned out fine. Doesn't really matter in my opinion which kind you use.

        I used salted butter and light brown sugar as that was what I had on hand. I also added 1 tsp cinnamon. The cookies were great! My mother even reconsidered her position on this type of cookie, she usually doesn't care for them. The BIG bowl of the finished product was gone the next day, so I think the kids agreed. As a variation, I made bars with the same recipe, adding 2 medium, chopped granny smith apples and baking for about 30 minutes. Everone was similarly appreciative of these.

        These are delicious. I used half the butter, half the sugar and blended oats for oat flour instead of regular flour. They came out just like I like my oatmeal cookies, soft and chewy and not too sweet. Thanks Rachel!

        I just made these cookies a few days ago. I don't usually like cookies either but I love oatmeal cookies. I swapped the walnuts for cashews. They were soft, chewy, and that little bit of salt set it all off. They were absolutely delicious. My BF couldn't get enough.

          Hi Brandy! So happy you loved them! If they're a bit sweeter than you like, I'd recommend decreasing the white sugar instead of the brown sugar. The molasses in the brown sugar imparts a chewy cookie texture, but try whatever you want and let me know how it goes! 🙂 x

        This is the second year I've made these and it has been the biggest hit ever! However Kama I add 1/2 teaspoon of cinnamon and I use mini chocolate chips does wonders.

        These look Ah-Maze-Ing!! I had a few questions!! I noticed that you didn't refrigerate the dough, do you think it would freeze or refrigerate well? Or would they not spread enough? Also, I am thinking of adding a bit of cinnamon because chocolate and cinnamon live happily ever after! <3

        The best cookies!!!!! I’m not a cook but was invited to a cookie exchange. Picked this recipe. Proportions not the same as Toll House cookies so I was skeptical. I used less milk chocolate chips and less than half the white sugar. Then I refrigerated the dough for 2 hours. Best cookies I’ve ever had. Oh yeah, I used jumbo eggs. They are beautiful. THANK YOU....

        So stinking good! Oatmeal cookies are my favorite! And this recipe was so easy to make. I had everything on hand. I halved the record because I'm the only one who eats oatmeal cookies and I would be tempted to eat them all in a 24 hour period! These were great!

        I don't typically leave comments and I'm not a huge fan of cookies but I love these cookies! I was baking for a friend so I modified it to try and make it healthier. I used the 72 Cacao chips rather than milk chocolate chips and 1/2 cup coconut oil instead of a stick of butter. They were delicious and I'm not sure how many will be left for my friend!

        I never leave comments on recipes but just came here to say.. GOOD LAWD!!!! Unlike you, I consider myself a cookie connoisseur and I just love (most) cookies so much. I stumbled upon this recipe here in 2022 in a quest to use up some walnuts and dark chocolate chunks I had laying around.. and oh my… THIS IS THE BEST COOKIE I HAVE EVER MADE OR EATEN. Hands down. This recipe is truly unbelievable and I’ve gotta say, thank you SO MUCH!! Only mods I made included using old fashioned oats instead of quick and dark chocolate chunks instead of milk. I reduced the sugar just a tad, and added 1/2 tsp of cinnamon. These were just out of this world and I can’t wait to surprise my husband with them when he gets back from his work trip. THANK YOU!!!!

        I'm a little late to the party, having just found this recipe a couple of months ago. However, my husband doesn't get tired of having these in his lunchbox, so I bake them every weekend. It's a heavy batter, but I found that I can use 2 C of oats instead of 3 and that makes it easier. I also customized it for half the choc chips since he only likes 1 or 2 chips in each cookie. If you like a dense, buttery and brown sugar flavor, this is the cookie you've been looking for.
