Just in time for the holidays, I've made a cooking video showing the step-by-step instructions to making the perfect chewy and delicious chocolate chip and walnut oatmeal cookies. And if you want, you can read the original post for this recipe here.
So there are 2 big tips to getting the perfect chew. And you need to employ both.
First, make sure you pack in the brown sugar when measuring it out. That way you get enough of it into the mix to properly sweeten your cookies while also providing that molasses that'll result in a wonderfully chewy cookie.
So if you don't pack it in and end up not adding enough? Well, you won't get enough sweetness or chew! So I can't stress it enough---pack that brown sugahh!
The second tip in getting the perfect texture to your chocolate chip and walnut oatmeal cookie is to not over-bake the cookie.
This may seem like an obvious "duh" point to home in but I can't tell you how many times I've made the mistake myself.
It actually makes sense that if you take cookies out of the oven and they look undercooked (even though the timer has gone off) that you'll get that urge to slide them right back in to bake for a few minutes longer. And they may seem perfect after a few minutes of baking longer but trust me, after an hour, they'll be tough, crunchy, and you'll soon regret toasting them to a crisp.
Don't wait for the cookies to darken. It'll be way too late by then.
These cookies will be very soft when you take them out of the oven but I promise, they'll set! Just be patient. They don't deserve to go back into the oven. Poor, innocent, yummy cookies.

Chocolate Chip and Walnut Oatmeal Cookies
Ingredients
- 1 cup butter 2 sticks, melted
- 1 ¼ cups brown sugar tightly packed; or rapadura
- ½ cup granulated sugar or rapadura
- 2 teaspoon pure vanilla extract
- 2 eggs
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon sea salt
- 3 cups oats
- 1 cup walnuts chopped
- 2 cups milk chocolate chips

I was not a fan of Cookies but after baking these Cookies i have been converted. they are the most awesome tasting Cookies that i have ever eaten. they were gone in seconds. I took some to work and they disappeared within seconds, now every morning i have visitors in my Office just to see if there is a plate of these Cookies laid out, what have i done ? now everyone expects me to bake everyday.
