This flavorful and tangy garlic Dijon vinaigrette is perfect on steamed green beans or any greens of your choice. It's definitely a go-to fresh and easy salad dressing!
Currently at about 40,000 feet above Portland, I’m full of my Persian mama’s home cooking, fish tacos, fudge, baklava, nutella stuffed sugar cookies, chocolate chip walnut oatmeal cookies, See’s Candies, more fudge, more food, and probably more fudge.
No guilt--- just an extra 5 pounds of happiness and warmth. I’ll need it for when we land in Washington, and then even more so, when we go back home to Chi-town.
But I do need to balance out all those holiday treats with some fresh and green wonders of our earth.
Uh... more or less, veggies.
When I eat too many sweets, my body starts craving plants and sour things. But I do always crave sour things so maybe that doesn't count. Definitely plants though. I definitely crave them when I've been sweets-happy.
I make this vinaigrette when I get like this, you know. It’s great on anything and I don’t know why it took me almost 6 years to make, from the first time I tried it in France. But better late than never!
It’s SO simple, quick to prepare and SO refreshing to boot! I dressed some French green beans with this dressing and it gave them such a zesty, tangy flavor that I’m extremely addicted to.
And you know what else I think they'd probably be really tasty with? Some garlicky pan roasted fingerling potatoes. Oh ma GOSH. I think I need to try that immediately! With chicken!
But for now, I’m going to put my computer away and continue listening to No Doubt’s Return of Saturn while I prepare for landing. It's good see-you-next-time-California music.

Tangy Garlic Dijon Vinaigrette with French Green Beans
Ingredients
- ¾ tablespoon garlic minced
- ¾ - 1 tablespoon Dijon mustard
- 2 tablespoon white vinegar
- ¼ teaspoon sea salt
- 1 pinch black pepper
- 3 tablespoon extra virgin olive oil
- 2 large handfuls french green beans raw or quickly steamed
Instructions
- Add all ingredients except for the French green beans and oil to a jar (or a bowl, or a cup) and mix until combined.
- Add the oil and mix well.
- Serve over steamed French green beans or your favorite salad and enjoy!
